Are you looking for a quick and easy recipe to get your day started with a nutritious, yet tasty breakfast? An Omelette is the way to go. Making omelettes is relatively simple, yet you get a lot of punch and nutrition out of this classic meal! Here is our own Indian-flavored twist, which is delicious and quite wallet friendly. All you need for 2 people:
- 4 Eggs
- Fresh Coriander
- Coconut Flakes
- Salt
- Pepper
- Curry powder
- Chili Flakes (or better yet, chopped up fresh chili peppers)
- Milk (optional)
The process is as simple as the ingredients list! Break your eggs and pour the content in a bowl. With a whisk, carefully blend the eggs together and beat them up until they reach an even, consistent texture. As an optional step, you can also add 2 tablespoons of milk for taste. The ratio of the rest of the ingredients is completely up to your personal taste: try as many of the spices listed above and be generous with the coriander and the coconut flakes! Once you have added your preferred ratio of ingredients, keep mixing in!
Meanwhile, heat up a pan with butter or sunflower oil on medium heat. When the surface is hot enough (it should take 3 to 6 minutes)… pour the mix in and let it sizzle! Lower the heat slightly and cover the pan.
Let it cook for 3 to 6 more minutes and check to make sure the bottom is cooked enough for you to flip the omelette and cook the top side as well, which should take 2 to 4 additional minutes.
Serve on a plate with a side of fresh veggies and hummus, or enjoy it in a sandwich with some aioli or herb mayo!
